The Best Chicken Noodle Soup

Description

This easy rotisserie chicken noodle soup is loaded with tender chicken, egg noodles and vegetables in a flavorful broth, made all from a rotisserie chicken.


Ingredients

For the Chicken Noodle Soup:

  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 3 stalks celery, diced
  • 2 carrots, peeled and diced
  • 3 cloves garlic, minced
  • 5–6 cups homemade chicken stock or store-bought chicken broth or stock, plus more as needed
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • 1 teaspoon mushroom umami seasoning, optional but highly recommended
  • 2 cups egg noodles
  • 2 cups shredded rotisserie chicken
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for serving


Instructions

For the Chicken Noodle Soup:

  1. Heat the olive oil in a Dutch oven or large soup pot over medium-high heat.

  2. Add the onion, celery, and carrots with a pinch of salt and black pepper. Cook for 5–6 minutes, stirring occasionally, until the vegetables begin to soften and the onion is translucent.

  3. Add the garlic and cook for 1 minute, stirring frequently.

  4. Pour in 5 cups of the chicken stock, then stir in the dried basil, dried parsley, and mushroom umami seasoning, if using. Bring to a boil.

  5. Add the egg noodles and cook according to the package directions until just al dente.

  6. When the noodles have about 2 minutes of cooking time remaining, stir in the shredded rotisserie chicken and cook until the chicken is warmed through.

  7. Taste and season with additional salt and black pepper as needed. If you prefer a brothier soup, add the remaining chicken stock until it reaches your desired consistency.

  8. Ladle into bowls, top with fresh parsley, and enjoy!

Notes

For the most flavorful version, use my homemade rotisserie chicken stock from the blog post above. Store-bought chicken broth or stock works great for a quicker weeknight version.

If you’re making this for meal prep or expect to have leftovers, consider cooking the egg noodles separately and storing them separately from the soup. This prevents the noodles from absorbing the broth and becoming overly soft as they sit.
