Ingredients

For the Pepperoncini Chicken Salad:

  • 1 shallot, finely diced
  • Zest from 1 lemon
  • Juice from ½ lemon
  • 2 cups cooked finely diced chicken (10-12oz)
  • ½ cup plain Greek yogurt
  • 2 tbsps mayonnaise 
  • ½ cup pepperoncinis, chopped
  • 1 tbsp pepperoncini juice 
  • 2 tbsps fresh chopped dill
  • 2 tsp capers, chopped
  • 1 tsp dijon mustard
  • 2 tsp whole grain mustard
  • Salt and pepper to taste
