Miso Chicken Piccatta

One of my favorite things about cooking is putting creative spins on the classics. No boundaries, no rules, just vibing with whatever I think will make a dish taste even better. Whether that’s adding gochujang to vodka sauce, piling kimchi onto Texas BBQ, incorporating chai spices into tiramisu, or adding miso into… well, just about anything. Because if there’s one ingredient I will find an excuse to sneak into a recipe, it’s miso. This fermented soybean paste is a little flavor bomb, adding a rich, savory umami that makes just about anything taste more delicious. And when you add it to a classic chicken piccata? Deeeeelicious.

Traditional chicken piccata is already one of my favorite ways to prepare chicken. You’ve got tender, golden-brown chicken cutlets swimming in a buttery, lemony white wine sauce with plenty of briny capers. It’s bright, rich, tangy, and pretty much everything you could want in a sauce. But adding white miso brings an entirely new depth of flavor, balancing the acidity of the lemon and the brininess of the capers with a subtle savory richness.

The best part is that the miso doesn’t overpower the traditional flavors of piccata. Instead, it enhances them, giving the sauce that little something extra that makes you wonder why you haven’t been adding miso all along.

And trust me, you’re going to want some crusty bread nearby because not a single drop of this sauce should go to waste.

Why You’ll Love This Miso Chicken Piccata

  • A creative twist on a classic: All the bright, buttery, lemony goodness of traditional chicken piccata, with an extra layer of savory flavor from white miso.
  • Restaurant-quality without the fuss: This dish feels fancy enough for a dinner party or date night but is surprisingly simple to make at home.
  • Packed with flavor: Between the white wine, lemon, capers, garlic, shallots, and miso, this sauce has the perfect balance of richness, acidity, saltiness, and umami.
  • Ready in about 30 minutes: An impressive dinner that doesn’t require hours in the kitchen.
  • Versatile and easy to pair: Serve it over pasta, alongside mashed potatoes (or my personal fav, Japanese sweet potatoes!), or with a big piece of crusty bread to soak up every last bit of that delicious sauce.

Ingredient Breakdown

  • Chicken breasts: Boneless, skinless chicken breasts are sliced into thin cutlets and pounded to an even thickness for quick, even cooking. You can also purchase pre-sliced chicken cutlets to save time.
  • All-purpose flour: Just a light coating gives the chicken a beautiful golden crust while also helping the sauce cling to each piece.
  • Dried mushroom powder: This is optional, but I love adding a little mushroom powder to the flour mixture for an extra layer of earthy, savory umami. You can find it at Trader Joe’s, or on Amazon.
  • Olive oil and unsalted butter: Using both helps the chicken develop a golden crust while adding that rich, buttery flavor that makes piccata so delicious.
  • Shallot & garlic: Our aromatics that make any sauce taste good.
  • Dry white wine: Deglazes the pan, picking up all those delicious browned bits left behind by the chicken, while adding acidity and depth. Sauvignon Blanc or Pinot Grigio are great options, but you’re only using 1/2 cup, so use something you like for drinking the rest!
  • Capers: A classic piccata ingredient! These little briny, salty bites provide a tangy contrast to the richness of the butter and miso.
  • Low-sodium chicken broth: Adds body to the sauce without making it overly salty, which is especially important since we’re also using miso, soy sauce, and capers.
  • White miso paste: The star of the show! White miso is milder and slightly sweeter than darker varieties, making it perfect for complementing the bright lemon and delicate chicken without overpowering the dish.
  • Soy sauce: Just a teaspoon enhances the savory notes of the miso and adds even more depth to the sauce.
  • Fresh lemon: Both the zest and juice bring brightness and acidity, balancing the rich butter and savory miso.
  • Unsalted butter: Whisking cold butter into the sauce at the end gives it a smooth, silky, glossy finish.
  • Fresh parsley: Adds freshness and a pop of color to the finished dish.

Tips & Tricks for the Best Miso Chicken Piccata

  • Pound your chicken evenly. Aim for about ½-inch thickness so the cutlets cook quickly and evenly. This also helps prevent the thinner parts from drying out while the thicker pieces finish cooking.
  • Be mindful of the salt. Miso, soy sauce, and capers all bring saltiness to the dish, so go lighter than usual when seasoning the chicken and flour. You can always adjust the seasoning at the end.
  • Don’t overcrowd the pan. Cook the chicken in batches if necessary. Giving each cutlet enough space allows it to develop a beautiful golden crust rather than steam.
  • Don’t skip the browned bits! After cooking the chicken, you’ll notice little golden bits stuck to the bottom of your skillet. That’s flavor! Use the white wine to deglaze the pan and scrape them up into the sauce.
  • Use white miso rather than red miso. White miso has a milder, slightly sweeter flavor that works beautifully with the lemon and butter. Red miso is more intensely fermented and can overpower the other ingredients.
  • Dissolve the miso thoroughly. Whisk the miso into the warm sauce until fully incorporated.
  • Finish the sauce over low heat. When adding the final tablespoons of butter, reduce the heat to low or turn it off completely. Whisk in the butter a little at a time to create a smooth, glossy sauce without it separating. The key is to just keep stirring to emulsify and thicken the sauce.
  • Taste before adding more salt. Once the sauce has reduced and all the ingredients have been incorporated, taste it before adjusting the seasoning. The flavors will concentrate as the sauce cooks.

What to Serve with Miso Chicken Piccata

With a sauce this good, you’ll definitely want something to soak it all up! The lemony, buttery miso sauce pairs beautifully with everything from pasta to potatoes, making this an easy recipe to dress up or down depending on the occasion.

  • Pasta: Angel hair, spaghetti, or linguine are perfect for catching all that delicious sauce. Toss the pasta with a little of the piccata sauce before serving the chicken on top.
  • Japanese sweet potatoes: my personal favorite pairing for this piccatta is roasted or mashed Japanese sweet potatoes. The subtle sweetness pairs perfectly with that sauce. You can also go classic with mashed potatoes!
  • Crusty bread: Honestly, this might be my favorite part. A warm, crusty baguette for dunking into the sauce is truly glorious.
  • Roasted or sautéed vegetables: Asparagus, broccolini, green beans, or roasted Brussels sprouts are great options for adding something green to the plate.
  • A simple green salad: A fresh salad with a light vinaigrette helps balance the richness of the dish.

Description

An ultra savory twist on classic chicken piccata, featuring tender, golden-brown chicken cutlets in a bright, buttery lemon white wine sauce with briny capers and savory white miso.

Ingredients

For the Chicken Piccatta:

  • 1.5lb boneless skinless chicken breast (about 3 large breasts)
  • ½ cup all purpose flour, for dredging
  • 1 tsp dried mushroom powder (optional)
  • 2 tbsp olive oil
  • 5 tbsp unsalted butter, divided
  • 1 large shallot, finely diced
  • 3 cloves garlic, minced
  • ½ cup white wine
  • 3 tbsp capers, drained
  • ½ cup low sodium chicken broth
  • 1 tbsp white miso paste
  • 1 tsp soy sauce
  • Zest and juice from 1 lemon
  • Salt and pepper to taste
  • Parsley and lemon wedges for garnish

Instructions

For the Miso Chicken Piccata:

    1. Slice the chicken breasts lengthwise, then cover with plastic wrap and pound using a meat mallet or heavy bottom skillet until ½” thickness. Season with black pepper. The miso and capers are salty, so you want to slightly under-salt the chicken.

Storing

To store: Allow the chicken and sauce to cool before transferring to an airtight container. Refrigerate for up to 3–4 days.

To reheat: For the best results, gently reheat the chicken and sauce in a skillet over low heat, adding a splash of chicken broth or water to loosen the sauce if needed. Avoid boiling, as high heat can cause the butter sauce to separate and the chicken to dry out.

To freeze: While the cooked chicken can be frozen, I don’t recommend freezing the finished dish. Butter-based sauces can separate when thawed and reheated, so this recipe is best enjoyed fresh or refrigerated for leftovers.

Frequently Asked Questions

What does miso add to chicken piccata?

Miso adds a rich, savory umami flavor that complements the lemon, butter, and capers in traditional chicken piccata. It creates a deeper, more complex sauce without making the dish taste distinctly like miso. Think of it as a little flavor booster that makes everything else taste even better.

Can I make this chicken piccata without wine?

Absolutely! Substitute the white wine with additional low-sodium chicken broth and a small splash of lemon juice for acidity. The flavor will be slightly different, but you’ll still have a delicious sauce.

Can I use chicken thighs instead of chicken breasts?

Yes! Boneless, skinless chicken thighs work well in this recipe. Just adjust the cooking time based on their thickness and make sure the chicken reaches an internal temperature of 165°F.

Why did my piccata sauce separate?

Butter sauces can separate when exposed to too much heat, especially after the butter has been whisked in. To avoid this, turn the heat to low or off before incorporating the final tablespoons of cold butter, whisking continuously until the sauce is smooth and glossy. If the sauce did break, just keep whisking on a low heat.

Can I make this recipe ahead of time?

You can prep the chicken cutlets, chop the shallots and garlic, and measure out the sauce ingredients in advance. However, I recommend cooking the chicken and finishing the sauce just before serving for the best texture and flavor.
