These freezer-friendly green chile breakfast burritos are stuffed with fluffy scrambled eggs, crispy hash browns, savory chicken breakfast sausage, melty cheese, and Hatch green chiles. Packed with protein and ready in under an hour, they’re the ultimate make-ahead breakfast to keep stocked in your freezer for busy mornings.
When my fiancé decided to train for a triathlon, I decided that his diet consisting primarily of Uncrustables and cereal probably wasn’t going to cut it. So I started making these freezer-friendly breakfast burritos, and even months after the triathlon, our freezer stays stocked with these bad boys.
But not just ANY breakfast burritos.
If you know me, you know my obsession with the breakfast burrito from Santa Fe BK, a New Mexican spot here in Brooklyn, runs DEEP. Their breakfast burrito is the one that made me fall in love with breakfast burritos in the first place. A soft, warm tortilla stuffed to the brim with fluffy scrambled eggs, crispy hash browns, savory sausage, melty cheese, and roasted green chiles. It’s the kind of breakfast burrito that can cure a hangover, fuel a busy day, or make a Saturday morning infinitely better.
And while I’ll happily continue spending $13 on the real deal whenever the craving strikes, I had to face the harsh reality that I may not always live ten minutes away from Santa Fe BK. So naturally, I needed to learn how to make my own.
These green chile breakfast burritos are inspired by my OG favorite, but with a little extra protein thanks to chicken breakfast sausage and a combination of whole eggs and egg whites. And because they’re freezer-friendly, you can have a delicious, hearty breakfast burrito ready whenever the craving strikes.
They’re so good that Mr. Rockin Meals actually claims he prefers them over the original. Which, quite frankly, is a BOLD statement coming from this household.
The best part? You can make eight hearty burritos in less than an hour, wrap them up, and stash them in the freezer for weeks of easy breakfasts. They’re also one of my favorite things to make for new parents, friends moving into a new home, or anyone going through a particularly busy season of life.
Whatever love language making someone a freezer full of breakfast burritos is, I’m fluent.

Ingredients Breakdown
You only need a handful of simple ingredients to make these freezer-friendly breakfast burritos, and most can be found at your regular grocery store.
- Chicken breakfast sausage: I like using chicken breakfast sausage for a leaner protein option, but pork breakfast sausage, turkey sausage, bacon, or chorizo would also be delicious. You can also leave it out!
- Eggs: The base of the filling! Whole eggs give these burritos their rich flavor and fluffy texture.
- Egg whites: I add a little extra egg white to boost the protein.
- Frozen hash browns: One of my favorite shortcuts. I use frozen hash brown patties and bake or air fry them until golden and crispy before adding them to the burritos. Frozen tater tots work just as well!
- Hatch green chiles: The star of the show! Hatch green chiles have a delicious earthy, slightly smoky flavor that gives these burritos their New Mexican inspiration. Canned green chiles make this recipe incredibly easy, and you can choose mild or hot depending on your preference.
- Shredded cheese: I’ve used any cheese I can find in my fridge for these, but cheddar and pepperjack are my go-tos. Cheddar adds a sharp, creamy flavor, while pepperjack brings a little extra heat.
- Large flour tortillas: You’ll want burrito-sized flour tortillas that are large enough to hold all that delicious filling. I personally buy mine from Santa Fe BK because their tortillas are THAT good, but any good-quality large flour tortilla will work. Vista Hermosa, Mi Rancho, and La Tortilla factory are all pretty solid store bought options.
- Seasonings: Garlic powder, onion powder, salt, and pepper add a little extra flavor to the sausage and eggs.
- If you want to add veggies, sauteed peppers and onions would be a great addition.
Tips & Tricks for the Best Freezer Breakfast Burritos
There’s a difference between a freezer breakfast burrito you’re genuinely excited to eat and one that tastes like something you found under a hockey rink. A few simple tricks make all the difference.
- Get those potatoes nice and crispy: Whether you’re using frozen hash browns or tater tots, make sure they’re properly golden and crispy before assembling your burritos. They’ll naturally soften a little during freezing and reheating, so starting with a crispy exterior helps preserve their texture. I prefer using the air fryer for this because it’s quick, easy, and gets the potatoes extra crispy, but you can bake in the oven as well.
- Don’t overcook your eggs: The secret to fluffy eggs that don’t turn rubbery when reheated is not overcooking them in the first place. I cook my scrambled eggs until they’re just barely set, then remove them from the heat and let the residual warmth finish cooking them. Remember, they’ll cook a little more when you reheat your burrito.
- Save the salsa, avocado, or other “wet” ingredients for serving. They’ll release moisture as the burritos thaw and can leave you with a soggy tortilla.
- Let your filling cool before assembling: This might be the most important tip of them all. Hot ingredients create steam when trapped inside a tortilla, which can lead to soggy burritos. Let your sausage, eggs, and potatoes cool completely before assembling. This little extra step makes a BIG difference when it’s time to reheat.
- If you’re working with storebought tortillas, you may need to warm them slightly to prevent cracking or tearing whiel rolling. I like to wrap mine in a damp kitchen towel and microwave them for about 10–20 seconds.
- Don’t overfill your burritos: I know, I know. It’s tempting to stuff as much filling as humanly possible into each tortilla. But trust me, a burrito that actually stays together is far more enjoyable than one that explodes out the other end with every bite. Aim for about ½ cup of the egg and sausage mixture, plus your crispy potatoes, per tortilla.
- Use good quality tortillas. Your filling could taste amazing, but if your tortilla is dry, I promise that is not going to be enjoyable. I like to get a pack from my local Mexican restaurant, but Vista Hermosa, Mi Rancho, and La Tortilla factory are all pretty solid store bought options.
- Don’t skip the skillet when reheating: Technically, you can microwave these and call it a day. But if you have an extra two minutes, I HIGHLY recommend finishing your burrito in a hot skillet. The microwave heats the filling, while the skillet gives the tortilla that golden, slightly crispy exterior that makes it taste freshly made. It’s a small step with a very delicious payoff.
Breakfast Burrito Customizations
Once you’ve got the basic formula down, you can switch things up depending on your preferences or whatever happens to be in your fridge.
- Switch up the protein: Try pork breakfast sausage, turkey sausage, crispy bacon, chorizo, or black beans for a vegetarian option.
- Experiment with cheese: Monterey Jack, Oaxaca, or a Mexican cheese blend would all be delicious alternatives to cheddar or pepper Jack.
- Change the potatoes: Frozen hash brown patties and tater tots are my favorites, but leftover roasted breakfast potatoes are another great option.
- Add some veggies: Sautéed bell peppers, onions, spinach, or mushrooms can add extra flavor and nutrition. Just be sure to cook off excess moisture before assembling.
- Turn up the heat: Use hot Hatch green chiles, add diced jalapeños, or sprinkle in a little cayenne pepper.
- Finish with your favorite toppings: Hot sauce, salsa, avocado, and sour cream are all delicious additions after reheating (just be sure to have them as condiments when serving, NOT inside the burrito as ingredients with a high liquid content do not freeze well).

Ingredients
For the Freezer-Friendly Green Chile Breakfast Burritos:
- 1 lb chicken breakfast sausage
- 1 tbsp olive oil
- 1 tbsp salted butter
- 10 large eggs
- ½ cup egg whites
- ½ tsp garlic powder
- ½ tsp onion powder
- Red pepper flakes (optional)
- 1½ cups shredded cheddar or pepper Jack cheese
- 2 (4-oz) cans Hatch green chiles
- 8 frozen hash browns, about 20 oz total, or 20 oz frozen tater tots
- 8 large flour tortillas
- Salt and pepper, to taste
Instructions
For the Freezer-Friendly Green Chile Breakfast Burritos:
- Make the filling. Bake or air fry the hash browns or tater tots according to package instructions until deeply golden and crispy. If using hash browns, let them cool slightly, then cut them into roughly 1” pieces.
- Meanwhile, heat a large skillet over medium-high heat and add the olive oil. Once hot, add the sausage and cook, breaking it up into crumbles as it browns.
- When the sausage is almost cooked through, season with the garlic powder, onion powder, and red pepper flakes, if using. Cook for another minute, until fully cooked, then transfer to a large bowl and let cool.
- In a separate bowl, whisk together the eggs and egg whites until frothy.
- Place the skillet back over medium heat and add the butter. Once melted, add the eggs and cook, stirring occasionally, until they’re about 80% cooked. Season with salt and pepper, then continue cooking until just barely set. Turn off the heat and let the eggs sit for a minute or two before transferring them to the bowl with the sausage.
- Once the sausage and eggs have cooled, stir in the cheese and Hatch green chiles. Taste and adjust the seasoning as needed.
- Assemble the Burritos. Set up an assembly line with your tortillas, potatoes, egg filling, parchment paper, and freezer bags or an airtight container.
- Wrap the tortillas in a damp kitchen towel and microwave for 20–30 seconds to soften them.
- Place a sheet of parchment paper on your work surface and lay one tortilla on top. Add 1 hashbrown (cut into 1” pieces) or 6 tater tots to the center, followed by about ½ cup of the egg mixture.
- Fold the bottom edge of the tortilla over the filling, tuck the sides toward the center, then pull the filling tightly toward you as you continue rolling the burrito into a tight cylinder.
- Wrap each burrito tightly in parchment paper and place in an airtight container or freezer bag.
- Refrigerate for up to 1 week or freeze for up to 6 months.
- To reheat:
- From the refrigerator, microwave the burrito in its parchment paper for about 1 minute, then finish it in a skillet over medium heat until golden and crispy on both sides.
- From frozen, microwave in the parchment paper for 2–3 minutes, flipping halfway through if needed. Then transfer to a skillet and crisp on both sides.
- If you have the time, don’t skip the skillet step, it makes the texture that much better.

Frequently Asked Questions
Can you freeze breakfast burritos with scrambled eggs?
Absolutely! Scrambled eggs freeze surprisingly well, especially when combined with other ingredients like sausage, cheese, and potatoes. The trick is to avoid overcooking the eggs initially and let them cool before assembling.
How do you keep frozen breakfast burritos from getting soggy?
The biggest culprit is moisture. Make sure your potatoes are crispy, your eggs aren’t overcooked, and all your fillings have cooled COMPLETELY before wrapping. Avoid adding wet toppings before freezing, and wrap each burrito tightly to protect it from freezer burn.
Do you have to thaw frozen breakfast burritos before reheating?
Nope! You can reheat them straight from frozen. Microwave until the center is hot, then finish in a skillet for a crispy exterior.
Can I make these breakfast burritos vegetarian?
Of course! Simply swap the chicken sausage for black beans, seasoned tofu crumbles, or your favorite plant-based breakfast sausage.
What kind of tortillas are best for freezer breakfast burritos?
Large, burrito-sized flour tortillas work best because they’re flexible, sturdy, and hold up well to freezing and reheating. Corn tortillas are more likely to crack when rolled into large burritos.
