Description

Sweet, spicy and creamy Bang Bang Salmon Bowls made with broiled salmon bites, fluffy jasmine rice, a crunchy cucumber edamame salad and homemade bang bang sauce. An easy weeknight salmon dinner that comes together in about 30 minutes.


Ingredients

For the Bang Bang Salmon Bowls:

  • 1lb skinless salmon, cut into 1” cubes
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp grated ginger
  • ½ tsp garlic powder
  • Zest from 1 lemon
  • 1 cup jasmine rice
  • Salt to taste
  • Sliced green onions for serving (optional)

For the Bang Bang Sauce:

  • 3 tbsp sweet chili sauce
  • 2 tbsp mayonnaise (Kewpie preferred)
  • 1-2 tbsp sriracha
  • 1 tsp soy sauce 
  • 1 tsp lemon juice

For the Cucumber Edamame Salad:

 

  • 2 Persian cucumbers, sliced into half moons
  • ½ cup edamame
  • 1 tbsp fresh cilantro, chopped
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tsp soy sauce
  • ½ tsp honey
  • Sesame seeds (optional)
  • Salt to taste
