ARUGULA, PEAR, GOAT CHEESE SALAD😍
Okay I’m with you, if there’s room on my plate for salad at Thanksgiving, there’s room for more mac n cheese, but this arugula salad is not just ANY salad. The pepperiness of the arugula counteracts the heaviness of most of the rest of the meal, and it’s got goodies like sweet pears, creamy goat cheese, and a figgy balsamic dressing that is just killer. You’re gonna love this!!

Arugula, Pear, Goat Cheese Salad

- Whisk together fig jam, balsamic vinegar, olive oil, mustard, lemon juice, salt, and pepper. Taste and adjust seasonings.
- Add arugula, pear, goat cheese, cranberries, and candied pecans to a large bowl.
- Just before serving, toss with a bit of the dressing at a time, you may not need all of it. Enjoy!
I made this recipe and substituted apple for the pear and added a grilled garlic bread. My wife loved the dressing and we will put this on our regular routine.
