GOCHUJANG CAULIFLOWER TACOS😍
Few things bring me more joy than a delicious taco, but one that’s delicious, meatless, AND requires less than 5 minutes of hands on time makes me feel like I’ve won the lottery. You’re gonna love this sweet/spicy/tangy combo!
Serves 2.
Ingredients:
For the Korean Inspired Cauliflower Tacos:

1 head cauliflower, broken into small florets

½ cup gochujang (I like Chung Jung One brand, it can be found easily at Vons or any major grocery chain)

1 tbsp coconut aminos (or soy sauce)

1 tbsp honey
-
1 tbsp rice vinegar
-
1 tbsp sesame oil
-
1-2 tsps chile garlic sauce (I love Huy Fong)

2 cloves minced garlic
-
1 tsp grated ginger

Salt to taste
For Serving:

4 tortillas (Use Siete Foods tortillas to keep this paleo)

Green onions for topping

Slaw to serve (optional)
Directions:
For the Gochujang Cauliflower Tacos:

Add all ingredients to a large ziploc bag and mix until every cauliflower floret is coated with the sauce.

Roast on a greased baking sheet at 450 degrees for 25-30 minutes.

Toast the tortillas in a little avocado oil to crisp up a bit.

Top the tortillas with cauliflower, green onions, and slaw. Enjoy!
