Description
Crispy baked Dirty Ranch Wings inspired by San Diego’s Dirty Birds wings—perfect for Super Bowl Sunday, made crispy in the oven and tossed in a creamy buffalo ranch sauce.
Ingredients
For the Dirty Ranch Buffalo Wings:
- 3 lbs chicken wings, wingettes and drumettes
- 1 tbsp aluminum free baking powder (1 tsp baking powder per pound of wings)
- 1 tsp salt
- Avocado oil spray
- ¼ cup buffalo sauce (I like Texas Pete or Noble Made)
- 4 tbsps unsalted butter
- Carrot and celery sticks for serving (if desired)
For the Ranch:
- ½ cup mayonnaise
- ½ cup plain Greek yogurt or sour cream
1 cup buttermilk - 2 Hidden Valley restaurant style ranch packets
Instructions
For the Dirty Ranch Wings:
- Pat chicken wings dry thoroughly with paper towels. Add to a bowl with salt and baking powder and toss until well coated.
- Line a baking sheet with aluminum foil for easier cleanup, then place a wire rack on top. Place the chicken wings on the wire rack, skin side up, leaving space between each wing. For extra crispy wings, refrigerate uncovered overnight, or at the very least 30 minutes. This helps the chicken wings dry out further, resulting in a crispier wing.
- While the wings are resting, make the ranch. To a bowl, add the mayonnaise, Greek yogurt or sour cream, and ranch packets. Mix until well combined, then store in an airtight container in the fridge until ready to use.
- Adjust the oven rack to the lower third position and preheat the oven to 425 degrees. Add chicken wings to the oven and cook for 45-50 minutes until golden brown and crispy, flipping halfway through.
- While the chicken wings bake, make your dirty ranch sauce. Add the buffalo sauce to a saucepan and heat on medium until warm. Whisk in the butter until smooth and emulsified, then shut off the heat and let it cool to room temperature.
- Once the wings are golden brown, remove and set aside for 5 minutes. This releases some of the steam from the wings, so they don’t get soggy once they get added to the sauce.
- While the wings are cooling, whisk 2 tbsps of ranch into the buffalo sauce to make your dirty ranch sauce.
- Immediately before serving, add wings to a bowl and toss with the “dirty ranch” buffalo sauce. Serve immediately with the ranch and carrots and celery if desired.
Notes
To air fry: preheat air fryer to 400°F. Add wings in batches to the air fryer, skin side down, in a single layer with a little space in between (do not overcrowd!). Air fry at 400°F for 20 to 25 minutes, flipping wings halfway through.
To keep wings warm for a party, keep unsauced wings in a 200°F oven, ideally no longer than 30-60 minutes. Sauce just before serving.
To reheat: add unsauced wings to a wire rack lined baking sheet and bake in a 400°F degree oven for 6-8 minutes or until warmed through and crisped up. Toss in sauce just before serving.
