
CURRIED CHICKEN SALAD:
We can all agree raisins don’t belong in potato salad but this is me trying to convince you why they do belong in chicken salads. Specifically this curried chicken salad, a burst of flavor, the perfect combination of textures, and a touch of sweetness, it’s the perfect balanced bite and takes 10 minutes to make.
My boyfriend made this for me for lunch one day inspired by a recipe his mom used to make and when I tell you one bite transported me to my childhood, eating a curried chicken salad crepe from Crepes y Waffles in Madrid (IYKYK). The flavors are so freaking good and it’s the perfect lunch to have in a tortilla, lettuce cups, or as a sandwich. You gotta try this one!
Ingredients:
For the Curried Chicken Salad:

2 cups cubed or shredded cooked chicken

½ medium apple, diced

2 tbsps red onion, finely diced

1 celery rib, finely diced
-
½ cup raisins
-
¼ cup sliced almonds
-
¼ cup plain greek yogurt
-
1 tbsp mayonnaise
-
2 tsps curry powder
-
Juice from ¼ lemon
-
Chopped green onion or chives for garnish

Salt and pepper to taste

Directions:
For the Curried Chicken Salad:

Mix together the greek yogurt, mayonnaise, curry powder, salt and pepper until combined. Add in the lemon juice and stir.

Add in the chicken, diced apple, diced red onion, diced celery, raisins, and almonds and mix until well combined. Taste and adjust any seasonings.

Serve in lettuce cups, in a tortilla wrap, or on bread for a sandwich and enjoy!
