The buffalo chicken patty is inspired by Pinch of Yum’s buffalo chicken burgers but I like to keep the buffalo pairing classic with a generous dollop of my cousin’s Nora’s creamy, tangy blue cheese dressing recipe that seriously turned me into a blue cheese dressing lover. Trust me—it’s a game changer. The burgers get brushed with more buffalo dressing after cooking, really amping up the flavor and juiciness of the burger.
Everything gets tucked into a soft, buttery brioche bun with crisp butter lettuce for crunch. It’s spicy, creamy, savory, and totally addictive. They’re a messy bundle of flavor and a must add to your weeknight dinner menu or 4th of July BBQ!

Ingredients
For the Buffalo Chicken Burger:
- 1 lb ground chicken or turkey
- ½ cup panko breadcrumbs
- ⅔ cup buffalo sauce, divided
- 1 tbsp melted butter
- 1 tsp garlic powder
- ½ tsp onion powder
- ¼ tsp black pepper
- ½ tsp salt
- Butter lettuce for serving
- Brioche buns for serving
- Softened butter for the buns
- Avocado oil or similar for frying
For the Blue Cheese Dressing:
- ½ cup plain Greek yogurt or sour cream
- ½ cup mayonnaise
- 2oz blue cheese crumbles
- 2 green onions, sliced thinly
- 1 tbsp dried parsley
- ½ tsp garlic powder
- 1 tbsp lemon juice
- Salt to taste
Instructions
For the Buffalo Chicken Burgers:
- Start by making the blue cheese dressing. To a bowl, add the greek yogurt or sour cream, mayonnaise, blue cheese crumbles, chopped green onions, parsley, garlic powder, and lemon juice. Mix well and taste to adjust for seasoning, adding a pinch of salt if needed. Store in the fridge for 15 minutes before serving to let the flavors develop.
- Now, start on your burgers. To a bowl, add ground chicken, panko breadcrumbs, ⅓ cup buffalo sauce, melted butter, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
- Divide the mixture into 4 patties and press flat, shaping each portion into a patty about ½ to ¾ inch thick. Try not to overwork the mixture—just press it together enough to hold its shape. Tip: If the mixture feels too soft to handle, you can chill it in the fridge for 15–20 minutes before forming the patties. This helps firm it up and makes shaping easier.
- Butter the brioche buns and toast in a cast iron over medium heat for about 1-2 minutes or until golden brown. Set aside.
- Over medium heat, drizzle avocado oil in the cast iron and add the patties in batches. Cook for about 3-4 minutes per side or until fully cooked (the internal temperature should be about 165 degrees). Brush each side with the remaining buffalo sauce and cook for 30 seconds each side.
- Remove and set aside to rest while you assemble your burgers. Add the buffalo chicken patty to a toasted bun and brush with more buffalo sauce. Top with butter lettuce and blue cheese dressing. Serve and enjoy!
