
FAVORITE SPICED SALMON
Been making this easy salmon recipe on repeat – it uses a similar seasoning as my grandma’s roast chicken recipe and is just loaded with flavor. I served it with smashed potatoes, but it tastes great with rice and some roasted veggies too. Enjoy!
Serves 2.
Ingredients:
For the Spiced Salmon:

2 salmon filets

½ tsp ground coriander

½ tsp smoked paprika

¼ – ½ tsp red pepper flakes (depending on spice preference)

½ tsp ground fennel (optional) – I grind my own in my coffee grinder

1 small clove garlic, grated

1 tsp orange zest
-
1 tsp lemon zest
-
1 tsp orange juice
-
1 tsp lemon juice
-
1 tbsp olive oil

Salt to taste
Serving Suggestions:

Rice or roasted potatoes

Roasted veggies like asparagus or broccoli or a side salad
Directions:
For the Spiced Salmon:

Preheat the oven to 400 degrees.

To a small bowl, add the coriander, fennel, smoked paprika, red pepper flakes, grated garlic, orange zest, lemon zest, orange juice, lemon juice, olive oil, and a pinch of salt. Mix to make a paste.

Place the salmon on a parchment paper lined baking sheet and rub with the marinade (don’t skip the sides!). Bake the salmon at 400 degrees for 12 minutes or until it flakes easily.

Serve with rice or potatoes and veggies and enjoy!
