
SPICED LAMB SALAD WITH CREAMY DILL DRESSING😍
One of my favorite flavor combinations in this world is spiced lamb, mint, and a yogurt base sauce like tzatziki. I wanted to take that flavor combo and put it together in a weeknight friendly salad. The flavors bouncing off each other make you forget you’re even eating a salad and the flavor is out of this world!
Serves 4.
Ingredients:
For the Spiced Lamb or Beef Salad:

1 lb ground beef or lamb

1 tsp cumin

1 garlic clove, minced or 1 tsp garlic powder

1 tsp oregano
-
½ tsp smoked paprika
-
1 tbsp olive oil
-
¼ cup chicken broth
-
Romaine lettuce or spring mix
-
Chopped fresh mint
-
Cherry tomatoes
-
Chopped Persian Cucumbers

Kalamata olives
-
Feta
For the Creamy Dill Dressing:

½ cup plain Greek yogurt
-
Juice from 1 lemon
-
¼ cup fresh dill
-
2 tbsps olive oil
-
1 garlic clove
-
Salt to taste
Directions:
For the Spiced Lamb Salad:

Heat a skillet on medium heat and add in the olive oil. Add the lamb or beef, cumin, garlic, oregano, smoked paprika, and a pinch of salt and use a wooden spoon to crumble the beef.

Cook for a few minutes on medium until the meat has browned, then add in the chicken broth to deglaze the pan. Stir until most of the broth has evaporated.

Make the creamy dill dressing by adding all ingredients to a blender or food processor and blend until smooth. Taste and adjust for seasoning.

Assemble the salad by dividing the lettuce, cucumbers, tomatoes, fresh mint, feta, and olives to a bowl with some of the meat mixture into 4 bowls. Pour over the dressing and enjoy!

I love using similar ingredients in different ways, so my other favorite way to eat similar ingredients is to serve the lamb or beef in a rice bowl with turmeric spiced basmati or jasmine rice (just add ½ tsp turmeric to the pot with the water), hummus, cucumbers, tomatoes, and the dill dressing.
