
BLACKBERRY COCONUT MOJITO😍
Go coconuts for this Blackberry Coconut Mojito😍 Guaranteed to send you right into the weekend… okay maybe not physically, but for sure mentally 😉 Take 5 minutes to transport yourself somewhere tropical tonight and enjoy!
Serves 1.
Ingredients:
For the Blackberry Coconut Mojito:

½ a lime, quartered

1-2 tsps sugar

8-10 mint leaves

3 blackberries
-
3oz coconut or regular rum**

Sparkling water to top (I love using the Coconut Yuzu Sparkling Water from Trader Joe’s)

Ice
**Note: I used RumHaven – a cleaner version of Malibu. I don’t recommend Malibu as it can be quite sweet. You can either do half malibu half regular rum, all regular rum, or all Malibu and just not add any sugar.
Directions:
For the Blackberry Coconut Mojito:

Add the lime wedges, sugar, blackberries, and mint to the bottom of a cocktail glass and muddle to release the juices from the lime and blackberries.

Add in the rum, stir, then add in a bit of ice and stir again.

Add more ice and top with the sparkling water. Stir and enjoy!
