
CHARCUTERIE CHOPPED SALAD
Holiday season is here, which means our fridges are full of leftover charcuterie ingredients and what better way to use them up than a huge chopped salad Cured meats, cheeses, nuts, fruits, all the like make this salad OH SO good – something even salad haters could get behind. You’re gonna love this!
Note:
There are two salad dressings I like to use with this: lemon Dijon or fig balsamic, depending on if I have leftover fig jam or not. Choose based on your personal preference!
Serves 3-4.
Ingredients:
For the Charcuterie Chopped Salad:

3-4 cups mixed lettuce (I like a combo of chopped romaine and arugula)

Leftover charcuterie ingredients (cured meats, chopped or crumbled cheese, nuts, olives, grapes, etc.
Dressing #1: Dijon Maple:

2 tsps dijon mustard

1 tsp maple syrup

2 tsps lemon juice
-
1 tbsps apple cider vinegar

2 tbsps olive oil
-
Salt and pepper to taste
Dressing #2: Fig Balsamic:

1 tbsp fig jam

1 tbsp balsamic vinegar

2 tbsps olive oil
-
2 tsps lemon juice
-
Salt and pepper to taste
Directions:
For the Charcuterie Chopped Salad:

Whisk the ingredients for either salad dressing in the bottom of a salad bowl.

Chop your lettuce and add to the bowl with your leftover chopped charcuterie ingredients.

Toss just before serving and enjoy!
