
GAMBAS AL AJILLO (Spanish Garlic Shrimp)😍
Your summer vacation plans may be cancelled, but that doesn’t mean you can’t bring a taste of Spain into your kitchens this summer😍 Just 4 ingredients and 15 minutes are needed to recreate one of my favorite Spanish dishes, and it couldn’t be easier! And don’t forget to grab a big loaf of bread, because the bread dunk into the garlic sauce is what dreams are made of.
Serves 2-4 as an appetizer, 2 for a light dinner or lunch with a side salad.
Ingredients:
For the Gambas Al Ajillo (Spanish Garlic Shrimp):

8 oz peeled and deveined shrimp

½ cup olive oil
-
8 cloves garlic, minced

1 whole dried cayenne pepper (Found here. You can also substitute for ¼ tsp ground cayenne in a pinch)

Salt to taste

Baguette for dipping
Directions:
For the Gambas Al Ajillo (Spanish Garlic Shrimp):

Add olive oil, garlic, and whole cayenne pepper to a medium sized skillet and place on medium-high heat.

Once the garlic is sizzling, cook for 2-3 minutes, stirring frequently to ensure the garlic doesn’t burn.

Pat the shrimp dry with paper towels and season with salt just before adding to the pan in a single layer.

Cook for 2 minutes on medium high heat, then cover and reduce to medium-low for 7-8 minutes.

Serve immediately and dunk that baguette into the garlic sauce – KEY to living your best life with this dish.
