
DAMN GOOD BANANA BREAD😍
Okay so I’m not really much of a baker, but I LOVE me some banana bread. I tested this 4 times until it was absolutely PERFECT and oh my god it’s seriously the best banana bread I have ever had. Perfectly moist (sry if you hate that word) with a hint of warm chai spices and a crunchy top, utterly drool worthy (and made healthier with whole wheat flour + natural sweeteners!!). Can’t wait to see you guys make this!
Ingredients:
For the Chai Spiced Banana Bread:

3 large overripe bananas or 4 small (1.5 cups mashed)

1 ¾ cups whole wheat flour (regular will work too)

2 eggs

⅓ cup melted coconut oil
-
⅓ cup vanilla greek yogurt
-
⅓ cup unsweetened applesauce
-
½ cup maple syrup
-
¼ cup coconut beverage or almond milk
-
1 tbsp vanilla extract
-
1 tsp baking soda
-
½ tsp salt
-
1½ tsps cinnamon
-
1 tsp ground cardamom (optional for chai spice)
-
¼ tsp ground ginger (optional for chai spice)
-
¼ tsp ground allspice (optional for chai spice)
-
½ cup chopped pecans or almonds
-
3 tbsps turbinado sugar to top (or coconut sugar)
For the optional but highly recommended maple cinnamon butter:

¼ cup softened salted butter
-
2 tbsps maple syrup
-
¼ tsp cinnamon
Directions:
For the Best Banana Bread:

Preheat oven to 325 degrees.

In a large bowl, mash the bananas with a fork until pureed.

Add eggs and whisk to combine.

Add coconut oil, yogurt, applesauce, maple syrup, coconut milk, and vanilla extract and mix to combine.

Add flour, spices, baking soda, and salt and mix until flour is incorporated, ensuring not to overmix.

Stir in the chopped pecans.

Spray a loaf pan with nonstick spray. For easier removal, you can also use parchment paper.

Add the batter to the loaf pan and top with turbinado sugar.

Bake at 325 for 55-60 minutes or until an inserted knife comes out clean.

In a bowl, mix the softened butter, maple syrup, and cinnamon.

Let cool slightly then remove from pan and slice in 1” slices.

Top with maple butter and enjoy!
